Salmon, lean tuna, shrimp, and even eel are all available to enjoy as much as you like. Wasabi is served separately, so you can adjust it to your preference. The lean tuna, in particular, had a rich flavor and was especially delicious.

Tempura, including lotus root, sweet potato, and shrimp, is served freshly fried and always hot. Shrimp tempura enjoyed with matcha salt, tempura dipping sauce, or simple salt was truly exceptional.

The buffet also features a generous selection of Japanese side dishes, such as pork cutlet simmered with egg, Saikyo miso–grilled chicken thigh, simmered beef with dried daikon radish, and teriyaki flounder. All are well-seasoned and pair perfectly with rice.

The Saikyo miso chicken had a gentle sweetness that soaked into the meat, making it hard to resist going back for seconds.

The hearty pork miso soup is filled with ingredients and delivers a mellow, comforting broth.
Oden made with Nagasaki-style grilled flying fish broth includes daikon radish, quail eggs, and fish cakes, allowing you to fully appreciate the depth of the dashi.

Enjoying the Essence of Dashi

Cod and vegetables steamed in Hokkaido kombu dashi offer a light yet flavorful dish that highlights the natural taste of the ingredients.
Spinach and clam ohitashi has a gentle, savory clam flavor, making it a perfect palate cleanser.

The takikomi gohan with scallops, scented with sesame oil, stood out with its fragrant aroma and rich umami.

Udon, Curry, and Salad Options

Warm udon noodles are served with a gentle bonito and kombu broth and taste even better topped with shrimp tempura.
Ichozaka’s vegetable-filled Japanese curry is mild and easy to enjoy, offering an unexpectedly satisfying option within the Japanese buffet lineup.

The most memorable dessert was the freshly made kushi dango.

On weekdays, guests can also enjoy a complimentary dessert plate ordered via QR code—a lovely bonus.
